Chocolate Blueberry Cheesecake
This is a great-tasting, great-feeling dessert. The flavor of blueberry with a punch of chocolate is outstanding--not to mention it's packed with protein. The secret to this cheesecake is a combination of greek yogurt and tofu!
Chocolate Blueberry Cheesecake
Ingredients
Directions
- 2-6oz containers of blueberry Chobani greek yogurt (about 1 1/2 cups) (360g)
- 1/2 cup plus 1 tbls silken firm MoriNu tofu (135g)
- 1/4 plus 1/8 tsp salt
- 2 tsp vanilla extract (10g)
- 3 packets Splenda or 3 Tbls sugar
- 2 tsp cornstarch or arrowroot (11g)
- 1/3 cup pure maple syrup (or another liquid sweetener) (75g)
- 1/4 cup plus 2 Tbls cocoa powder (30g)
- Favorite 7-in pie crust (or make a crustless cheesecake as shown with my crustless cheesecake trick)
Directions
- Preheat oven to 350F.
- Combine all the ingredients in a food processor, then transfer the ingredients into your pie crust (or spray a 7-in baking dish with oil spray and add the ingredients.)
- Bake the cheesecake for 50 min. in the oven and allow to cool for one hour before transferring it to the refrigerator to chill and set for at least 8 hours.
