Overnight Coffee Cake
Coffee cake is one sweet treat that gets me out of bed in the morning. It's the perfect addition to any breakfast or brunch and always tastes better accompanied with a hot cup of joe on the side.
When I went to visit my grandma in Freemont, I helped her make this coffee cake for coffee hour at the local church. We prepared the cake the night before and baked it at the church the next morning. It was fresh and scrumptious for all the churchgoers and by far the best dish on the assembly line.

Put it all together:
Note: This cake is not required to sit overnight, but it is a good idea for a quick coffee cake in the morning with little fuss.
For the pan:
- Coat the surface of a 9-by-13-inch pan with crisco or butter. Put a little flour into the pan and spread it evenly over the surface of the pan by tilting and patting the pan. Get rid of the excess flour. (For more detail see the Brown-Bottom Cake instructions.)
For the batter:
- In a mixing bowl, sift together the flour, baking soda, salt, baking powder, and cinnamon. Set aside.
- In a large mixing bowl, cream sugars and butter, using electric mixer set on medium speed. Add the eggs one at a time, and then add the buttermilk and sifted dry ingredients. Make sure to scrape down the bowl so that all the ingredients combine with the batter.
For the topping:
- In a small mixing bowl, stir together the sugar, cinnamon, pecans, and nutmeg
Put it all together:
- Pour the batter into the prepared baking dish. Spread the topping evenly over the batter. Cover and refrigerate overnight (optional). Bake the cake at 350F for 30-40min the next morning.
