The Breakfast Pizza (serves 2)
Pizza for breakfast? I know it sounds weird, but it's totally delicious! Add your favorite breakfast meats and vegetables to start the day your way.
The Breakfast Pizza
-Yields 2 servings

Note: If adding additional toppings, I recommend putting them underneath the eggs so that they do not fall off of the pizza.
Ingredients
- 1 very thick slice of pita bread (I used Aladdin's Bakery White Wraps)
- 1/4 cup shredded mozzarella cheese
- 1 large eggs
- 1 tsp oil (can omit)
- Optional Additions: bacon, ham, sausage, spinach, garlic, marinara sauce
Directions
- Preheat oven to 350F.
- Place the pita bread on a pizza pan. Spread the oil, and then the mozzarella cheese, evenly over the pita bread. Crack the eggs and carefully place them side by side on the pita.
- Cook the pizza for 20-25 min, depending on how runny you like the yolks.
