Glorified Rice
This rice definitely fits its name. It's a sweet treat perfect for kids and adults alike. Holiday parties will be worth the fuss to get one bite of this savory dish.
Glorified rice is guaranteed to be a party hit and can be easily modified to fit the liking of any one person (unless they are not a fan of perfection!)
Glorified Rice
Ingredients
- 1 small can fruit cocktail (save the juice)
- 1 can crushed pineapple (save juices)
- 3 cups liquid (water/fruit juice)
- 3 cups minute rice
- 1 tsp cinnamon (can add more or less depending on your love for cinnamon)
- 1 container cool whip (I like to use sugar-free)
Directions
Optional: garnish with more cinnamon, nuts, or shredded coconut.
- Combine the juices from the fruit cocktail and the crushed pineapple together. Add enough water to the mixture so that the liquid amount equals 3 cups.
- Bring the 3 cups of liquid to a boil. Add the minute rice and cinnamon to the boiling water, then cover and remove from heat until all the liquid is absorbed. Refrigerate the rice until cold. (This can be done ahead of time so that the rice is cold.)
- Once the rice has cooled, add the fruit cocktail, crushed pineapple, and cool whip to the rice. You can also add additional fruits to your glorified rice.
Optional: garnish with more cinnamon, nuts, or shredded coconut.
